Overnight Oats With Plum Compote

Description

This recipe was inspired by my friend Annie at her yoga event. I helped prepare the food for several guests and this recipe went down a treat. I thought it was so simple but really yummy – too good not to share!

Instructions

Remove stones from plums, chop into 2 segments and place in a pan.

Add 1 tbsp stevia sugar and add water so it just covers. Boil the plums on a low heat and keep adding water so they don’t burn. It will take around 20-25 minutes to stew.

For the overnight oats mix 150g oats with the chia seeds, nuts, sultanas and dates. Stir the dry mixture together and then add in the date syrup and milk. The oats will need to be left for 30 minutes in the fridge. 

After 25 minutes remove the plums from the heat and let cool.

Remove the overnight oats from the fridge and serve into 4 bowls. Add a generous helping of the plum compote on top. If you’d like a dollop of nut butter also adds a lovely depth of flavour to this beautiful breakfast dish.

  • 2 tbsp. chia seeds
  • 1 x small handful chopped pistachios
  • 1 tbsp. sultanas
  • 5 chopped dates
  • 5 plums
  • Boiling water
