Vegan Protein Balls

These are one of my favourite snacks. They taste so incredibly clean and they aren’t too sweet!
Before you create these yummy snacks soak your dates in the maple syrup and 50ml coconut oil over night to really soften.
Blend your oats to make a fine powder. Then blend in your dates and cashew nut mix. Melt the coconut oil and stir in. Then stir in the chia seeds and vanilla protein. add the mixture to the fridge for 10 minutes.
Next, add a small handful of mixture and roll into a ball. Then roll it in desiccated coconut. Store in the fridge – they will last up to 5 days.
- 220g oats
- 2 tbsp coconut oil
- 1 tbsp. maple syrup OR honey
- 1 handful cashews, chopped
- 1 tbsp chia seeds
- 1.5 scoop vanilla protein powder
- 100ml oat milk
- ½ tbsp. date syrup
- Desiccated coconut
